Explore the political, economic, and environmental forces shaping our world as well as inspiring solutions! Topics include environmental, climate and economic justice; food sovereignty; agroecology; innovative educational and health models (e.g. the Zapatistas, Kerala and Cuba); Gender Justice; Decolonization; Migration; and Indigenous Sovereignty. We'll ask who decides which issues get prioritized, what drives compassion and collective action, and how communities around the world are building real solutions!

This course offers an interdisciplinary introduction to human wellbeing. We will take a thematic approach to analyzing the factors that impact wellbeing, focusing on health, education, and the environment.

Most people living in rich countries are healthier than at any time in human history. Yet, people across the globe suffer and die of preventable or treatable diseases every year. Why is this the case, and how can we address it?

What are human rights? How do human rights function in today's world? Do human rights matter? This course will introduce students to the study of human rights, examining diverse perspectives on the concept, practice, and implementation of human rights and human rights regimes locally and internationally .

This course offers an exploration of global food movements; topics to be covered include the transition from family farming to industrial agriculture, the relation between food sovereignty and food security, political economy of agriculture, agrarian values, agroecology, peasant movements, urban agriculture, and food justice.

This course explores how agriculture shaped early Israelite society and continues to influence Jewish traditions and cultural identity. It also examines the connection between ancient practices and modern Israeli rural life through literary analysis.
